 Our June program will feature a demonstration on baking fish “en papillote” (enclosed in a paper heart with savory vegetables)  This is truly a fabulous way to cook fresh fish and was a standard feature on Chef Jeff’s menu at Pesca Restaurant in NYC. Also on topic will be oysters raw and cooked; a guide to buying and preparation. (Yes, the old adage is true).
